Multiple Peripherals how many Arduino's

    My Motion Simulator:
    3DOF, DC motor, Arduino
    Hi just starting my Sim entry after seeing some videos of the brilliant DIY's that are out there and me not realizing DIY motion Sim was a thing!
    So limited budget and wanting realistic feel I will be almost 100% DIY. I have fabrication and electronics experience already, I will be making a Handbrake, Shifter(not sure if Seq or H yet), and pedals
    My question i am hoping some knowledgeable people can answer is, Do I need an Arduino 32u4 for each Peripheral?
    or
    Can I say put 1 Pro mini in the Pedals, and the handbrake/shifter would just be the analog sensor/switch's which i can pass to peddles with a harness or bluetooth module?
    I think I understand enough code to assign each peripheral switch to individual inputs on the Arduino although I have made plenty of messes doing that before
